Will that Vanguard head fit on any gun rest?

If your current head can be removed from your support, the new Vanguard head should fit. There is a long established industry standard for attaching the head through either a 1/4" thread (for smaller, lighter supports) or a 3/8" thread (more commonly found on larger supports). Vanguard's heavier heads (such as the GM-70) have a 3/8" thread hole in the base and include an adaptor to make it fit the smaller 1/4" thread.  Please note that some heads designed for lighter supports (such as the U-Yoke) only have a 1/4" thread.  These can still be attached to most supports, but a few may need need you to use a tripod head as the quick release plate will always have a 1/4" thread.
